Idk what you've watched, but the "popular" stuff works for a reason, and then once you've watched that you can spin off into different more niche ones. Neon Genesis EvangelionThe melancholy of Haruhi SuzumiyaCode GeassSteins;GateInuyashaYu yu HakushoShakugan no Shana Haruhi in particular because the anime ends with a theatrical movie which is to the day the greatest animated movie I've ever seen, I rewatch it every year.Once you've seen the ones that are good and overtly display themselves, you will enjoy the ones that draw you in subtly, like Crest of the Stars or Mushishi.Also there's comedy like Seto no Hanayome, Golden Boy or Cromartie High, or romance like Toradora or Golden Time.
