I make the sauce first wi th butter in the pan on low, then onions go in first ( they go in first cause they need to carmalize) then when they half way done crank the heat up and put in mushrooms and diced shallots and garlics, when it done take those out of pan then deglaze pan with dry white wine, burn off the alcholol then add chicken stock and peppercorns and smoked paprika and and let reduce, then cut the heat down and ad whole grain mustar and dijon mustar, and maybe more butter, then the heat go OFF (so cream doesn’t curdle) and u put the cream in! It’s very tasty I’ve made it for many yearz! (Pic related is an old picture of it b4 I started adding shallots and onion). I hope u get the chance 2 try it.
