Most of our top-tier stadiums are older (and therefore not as fancy), smaller (because there are much more clubs in smaller areas, there are 32 NFL teams all across the US while a German state like NRW with a population of 18 million has like a dozen relevant football clubs), and generally less expensive because of the difference in system: you have franchises that are all about profit, it's almost impossible for them to lose money (for example, they cannot get relegated), all franchises are owned by mega rich dudes who get the red carpet rolled out by every city, they can demand tax money for their new playtoy stadiums as well. It's a hypercapitalist nepotism network, but it works when it comes to profit and building gigantic stuff. European football clubs on the other hand are often fan-owned or at least not in the hands of a single owner, and their profits are much more volatile, thus they have more qualms about building huge stadiums. Also, European fans are less crazy about tech and entertainment in their stadiums, they are more than happy with just watching a game. It's less of an event and more of a regular thing for many Europeans
The relevant European nations have a few stadiums each that generally fit American NFL standards in terms of size, but are probably less fancy than average
I looked up that the smallest NFL stadiums are in the 65k range. Germany has 6 stadiums with a capacity of >60k. Many top clubs could easily host more people these days, but building simply isn't that easy
