It's weird that the lower one is trained with 1100s rated players but then it gets rated 1380 blitz / 1628 classical on lichess. Also, why not training one with the 800s or the 600s? There must be some technical difficulties to go lower and still be "credible" in emulating humans.

My guess is that once you're at 1100 you fuck up less often than not, so the average move is sound, so then the 1100 average move bot will always play sound whereas the 1100 human will not, hence the higher rating.
My guess for the other point is that below 800 you fuck up more often that not so an 800 average move bot would be a total blunderfest.

Depends on how best you learn things. For beginners, I think videos are often very good. Books can be dry and/or frustrating to learn from. I generally recommend Ben Finegold's lectures for beginners (all available on YouTube). I think he's a very good teacher and he mixes in a dash of humour here and there. Other people on YouTube you can learn from are Daniel Naroditsky and John Bartholomew. They both have "speedrun" type videos where they start at a low rating and play their way up, all the while explaining their thought processes. (Bartholomew's are called "Climbing the Rating Ladder")
