I don't think she would. She wasn't sheltered the same way Weiss was, and I don't think she would have been raised in a way that would encourage viewing people differently based on their social standing or wealth. However, I do think she holds the people around her to exceedingly high standards without always thinking about what went into making herself capable of meeting them. As an example, she might get frustrated with Scarlet for not meeting her standards immediately, while overlooking the fact that she had the best education money could buy and tutors in anything she wanted since the time she could walk, whereas Scarlet went to public school and didn't have Bloodline Autism motivating her to surpass every goal anyone ever set for her.
I also think that after realizing that, Lumi would offer to help Scarlet(or anyone in her team/friendgroup) as long as they were willing to put forth their best effort and respect her time. Lumi always came across as relatively down-to-earth to me for someone who was raised in a household with an infinite money glitch, she just values refinement, composure, and personal excellence, which to people that don't know her, can come across as snobbish or otherwise rude.

I think that would be quite a internal conflict for Ruby. On one hand, she wants to give people second chances and believe they can become better. But on the other hand, she had front row seats to Cinder executing Pyrrha, her classmate/role model/friend in an extremely brutal fashion. She didn't need the completed Maiden powers to heal her dying family member or something that could maybe, possibly, sort of resemble a "sympathetic" reason to do all the shit she did. When Ruby learned that, and that the Ozluminati cut a plea deal with Cinder because it was the convenient thing to do, I bet she saw red.
So I think it's an ongoing conflict for her to this day that she wants to give them a second chance and not hate them, but dammit, these people killed Pyrrha and cut off her sister's arm and that isn't something she can just forgive and forget.

I've never read/watched Tokyo Ghoul but that description reminds me of Prototype, so that sounds quite cool. I like it

TG is essentially a modern day vampire story ala Vampire: The Masqurade or Twilight, just using ghouls/wights/ect as their base. Pretty much, there's a species of human offshoots called Ghouls that have vastly better strength, speed, and durability than a normal human, but the only thing that they can actually get nutrients from is human flesh. They also have a specialised organ called a Kakuho, which is used to create these temporary flesh constructs stemming from their back called Kagune, which serves as their trump card (as if the speed and strength wasn't enough) and also allows them to heal from extremely grievous wounds if they have the right Kakuho type.

Where this gets Prototype-y is that when a Ghoul engages in cannibalism, in exchange for speedrunning their mental decline, they can absorb the Kakujo of their victims and produce far larger, more specialised kagune, essentially progressing from being able to spawn an extra limb or four to being able to create an entire larger, freely malleable set of muscle and bone around themselves to function as armor, called a Kakuja, seen in pic related.

The paralels with this general system (the Kakuja specifically) and the Nihil should be pretty obvious.

Ah I see. That does sound like a cool idea for Nyx and I think that could be incorporated into the story somehow. Like rumors start spreading of a humanoid Grimm hunting down and eating people, and getting more monstrous based on reports from survivors until there stop being reports entirely. Then whatever team is sent out to its last known location finds Nyx there, mid-feeding to keep the human parts of her body nourished while also keeping the Grimm parts' thirst for destruction sated.
