Theoretically, everywhere needs to accept cash as payment. It's not totally unheard of to use cash, either. It's still around. Buses accept it as well.
I'd recommend using Alipay's tourism card. But always carry some cash of various denominations, for emergency. You may come across situations you can't use Alipay, because maybe a street vendor is only equipped for WeChat pay (probably impossible as a tourist to use). Frankly, it's a pain in the ass. Most places don't take card, either.

In my experience, Chinese bureaucracy doesn't bust your balls like their American equivalents. I literally forgot critical documents when I went, and they worked with me to get the right info after some brief questions. And, at least for me, they were friendly.
Also, the likelihood of being arrested as an American in China is less than being arrested in the US. For any cause. I did the math. And it's one of those things where you're such an obvious stick-out, they're not exactly worried about you being a glownigger, because you wouldn't even try if you were.

Getting a non-teaching job is difficult. The majority of all work visas are teaching related. The other jobs exist, but they're not as common. And if you want to get in, teaching is the most reliable method.
On the other hand, teaching can be lucrative in the mainland. Good chance you can make more money teaching than doing other things, even those which need expertise. I made more money doing ESL than a lot of business professionals.
It's much better than in say, Japan or Taiwan. And it's only getting better, due to the shortages, the purge of shady training centers, etc. A college educated Anglo is like a golden ticket, since more and more Jamaicans and Africans are taking their place (and yeah, the locals learn who they prefer by experience).

What infratructure issues specifically? I think the biggest issues for average Americans randomly being sent to China are: 1) they get scared and get into defense mode when they see Chinese signs, 2) rice, not a lot of bread or pizza or taco, 3) traffic is Eurasian style for the most part

Regarding 1 just keep reminding yourself that you are in a different country. Besides there will be a lot of bilingual signs. Besides you have a plethora of translator apps to choose from, all of them pretty decent. Map applications, etc.
#2 Just pack bread or something. (Then again, your hotel breakfast buffet will 100% have some toast bread at least, and if it's a half-decent hotel you can get some semi-American style foods at least for breakfast. Baozi have been approved to be good survival food by my bread-addict friends. Worst case they just go to McDonald's. (Some basic American chains exist there.)
3) You will be carried everywhere by a driver if it's your company sending you anyway. If not, the local rideshare apps are pretty good. Just enjoy being driven everywhere. (Public transport is heavenly, but I doubt you will have much chance to experience that in a work setting. Maybe on a weekend you will have a chance to cry at how comprehensive the public transport is?)

Your real problem is probably gonna be the work culture, not the infrastructure. Just remind yourself to make friends there at the office. Eat with them, try everything you are comfortable trying. Make up nice ways to say no. Bring drinks or cigarettes as gifts or something.

as the rules are written you would not get a Z visa then Residence Permit in order to teach unless you have a Bachelor's Degree or higher. in reality you can get the visa and permit and can teach but it comes down to who is employing you, their connections and their location. such things you cannot know without contacting someone and asking about it. if they are in a small city or a poorer, out of the way province and need teachers, if they are desperate for teachers and the local government is on their side then the laws can be relaxed and things can be ignored (or invented) and your paperwork can be processed.
but if you are trying to get a job in for example Shanghai at a good school, a top brand school or a expensive tuition school, then they are not going to entertain applicants without the paperwork and the government are not going to turn a blind eye to the regulations.
so it depends. you can go to Inner Mongolia but you can't go to Beijing in all probability. things have gotten much stricter, as they always do.

Even if you're one of the top engineers in the world no one in China will hire you for anything other than English teacher or greeter. You have to start your own business. If you aren't entrepreneurial and you don't want to be around kids, look for a greeter job. As a greeter, you work for some company that has a lot of foreign clients. You meet with the clients when they arrive in China and escort them around to make them feel more comfortable seeing another white face. Being fluent in Mandarin will make it a lot easier to get these jobs, since you can then do double duty as a translator and tourism facilitator/guide.

I got one made in Guangdong for $500 USD 15 years ago. It's good quality yeah, it's still the suit I use for weddings and funerals. I say go with the classic looking 3 button option when given the choice, and if they offer to leave a little extra fabric folded in the seams, I say accept so if you ever gain weight you can get the suit adjusted and still wear it.

As far as picking a tailor, ask a couple middle or upper class looking old guys if they can recommend one. I asked a guy in his 60's if he could recommend a place and he walked me all the way over to it.

Went to Sanya. I can't remember the name of the travel agency, the clerks at my hotel in Chengdu put me in touch with him, some guy in a Hawaiian shirt with a ponytail. I think the cost was $90, was 15 years ago though so a lot more expensive now I'm sure. The clerks and the travel agent all spoke some English.

I've been there multiple times. done 20 hour sleeper trains, once 50 hour to Tibet. But never really thought about the bicycle.
Was thinking next year cycling through China, but the 30 day visa is a bit problematic. Can't make it to Tianjin/Qingdao from the other side of the country in 30 days. I would take a ferry to Korea.

Suzhou is nice, near Shanghai & Hangzhou. Good for a day trip. Takes like an hour with a train from both cities. Has canals, which are cool. Nanjing also great.

Yunnan and Sichuan are both great. You could hit Guilin though, visit the caves, take a river cruise to Yangshou. Pretty popular tourist spots, so maybe not during the holidays. Jiuzhaigou is beatiful in Sichuan, or go Zhangjiajie.

Chengdu is interesting if you're into pandas or Tibet, Chongqing is a fairly unique city on its own.

Its been years since I've been to both, Chongqing especially has grown a lot.
I would choose Chengdu, it has the Panda Sanctuary. You can see their kids if you go at the right time. I mean like few weeks old Pandas, in incubation chambers. It's not a zoo in the traditional sense, but a place where they conserve them and try to get them to breed. They have red pandas also.
But depends what you like. Chongqing is massive, 35+ million people or something like that.

Chengdu. I lived in Chongqing and loved it but as a tourist Chengdu just has more things to do and food options in Chongqing are surprisingly limited as Chongqing people won't eat food that isn't hot pot. The two cities are part of the same cultural sphere of China. People talk a similar language, eat similar food and think of each other as brothers but for some reason every Chengdu version of Chongqing food just blows it out of the water.

Hope you speak Chinese as both cities aren't international tourist friendly and many hotels will reject you

depends if you want to do high class luxury shit or slumming it, yes it's enough for the latter, no to the former, housing is going to be your main expenditure so book ahead and see how much damage it's going to be

I don't have kids, so I'm not sure what's best for traveling with them but there's a Disneyland close to Shanghai that's supposed to be good. And you could do some research on local cultural festivals, there are a lot and most of them are child-friendly. I'd usually recommend the south (Yunnan/Sichuan/Guangxi) since it's not so crowded and they are great day-trip opportunities all around but it's rain season during that time of year.

Also, I don't know if you've been to Taiwan before but that's basically "China light" and might be more suited for traveling with kids. It's way more easy to get around and acclimate.
