Of the OG starters, the Charmander line is basically all in on speed and offense compared to the easy mode balanced Bulbasaur line and durability-oriented Squirtle line. I wonder if they did it simply because they have such similar character designs. I don't mind the yuri shipping but I agree that I find it less enjoyable when one of the characters is clearly meant to be straight. Peach even gives Mario the classic kiss on the cheek at the end of the movie and there's a whole subplot of Mario trying to be less awkward with her until he manages to confidently hold her hand.

At this point the biggest problem right now is they've got some stuff tied up with NBCUniversal, but Zelda is at Sony(where Nintendo/Miyamoto were also workshopping the Mario movie before it ultimately went to Universal).
