There have been several ocean planets identified, at least one so heavy it likely has pressure induced ice at the bottom of it.
The reason we weren't finding earth like planets a decade ago was because the easiest method to find an exoplanet is occlusion. Watching for when a planet passes in front of its star, from our perspective. Or by studying the "wobble" the gravitational pull of a planet causes on its star. Both of which bias the data toward jupiter or heavier planets orbiting close to their stars.
Newer methods and equipment have let us see all sorts of smaller and JWST can even potentially image planets directly now (albeit in very low detai). The result is that we are finding fuckloads of earth sized planets we didn't see before.

So you have to speed up your bullet to ensure it arrives fast enough the target hasn't invented a way to deal with it. But every % you do so requires more and more energy. More energy going to accelerating your bullet means both more energy that your target can potentially detect and everyone else definitely will detect.

Thats why in the Three Body Problem the Trisolarans go to such roundabout methods to sabotage Earth. They have to undercut technological development so that their invasion will actually succeed. And in the end the only thing that can reasonably wipe out humanity ends up being magical dimensional folding technology from a third party.
