Parrying and hitting R2 or L2 when your claws are out would do more damage to that specific limb. One you do enough damage to that limb with claw attacks, the limb would be cut off, which would be an instant kill for early game normal enemies, and only a slight inconvenience for the beefier enemies like the Resurrector (Fat Hand guy with a mace that can revive dead enemies), since it would remove the attacks they did with that arm.
