Human has 2% crit which helps not just every spec in raiding but throughout leveling since destro is too mana heavy for it. Life tap also scales with spirit so it's at least equal to 5% extra mana if not better. Stun break should be more useful than breaking free of snares. Human is the way to go. Even if I'm not always about minmaxing, having a racial that doesn't work most of the time just feels bad.

So you can have maxxed out Sneak, Hide in Plain Sight, Move Silently, Subtle Hands, Dodge, Experitse, Improved Expertise, and since you’ll get like 20 skill points a level, you can have like 124 Dodge, 124 Sneak, etc etc
