Is there a consensus on which mythica/legendaries are canonically one-of-a-kind and which are just rare species?

No. The games and anime really aren’t consistent about it. It’s probably for the best to treat each legendary as an exceedingly rare species though, as that’s generally closest to how they’re portrayed.

Every single Pokemon has an infinite quantity due to the nature of spacetime fuckery being as common as an occasional sprinkling of rain from a gorillion different sources, pushing and pulling Pokemon across timelines and universes as GameFreak sees fit to ensure you can always acquire a "one-per-universe" Pokemon that logically should not be present, but is thanks to the aforementioned fuckery.

Only Arceus has the “received a part of it” entry in the journal, and only it copy pastes itself into your inventory. Not really the case for any other legendary or mythical. In HGSS we see it can just make extra Sinnoh dragons whenever, too.

Or even if Arceus just created Sinnoh. The games say it (in legend) “created Sinnoh and *possibly* the entire world” and Laventon says its light only spreads across Hisui, so we really don’t know the extent to which Arceus/an Arceus actually governs. We probably won’t get an answer.

Don't be dense, you're trying to argue the in game personifications of spacetime itself the fundamental bedrock of reality itself as we can conceive it, cant otherwise be in more than one place at once or spit themselves? Come on...
