I did a kyurem raid and tried doing the zekrom raid that popped up after since it wouldn't cost me a pass, but it gave me an uncatchable kyurem at the end. And I can be sure the uncatchable part wasn't just terrible luck with my throws because the damn thing was a shiny and it just kept saying "network error"

Nah it was weird, the timer for the raid expired while I was in the lobby but it still allowed me to complete it normally and catch the raid boss afterwards, but when I pressed on the gym again to check the one that popped up immediately after it had the little checkmark over the pass icon similar to what happens when you lose a raid, and it let me host it without spending another pass. IV-wise you want Pokémon with low attack, and high defense and stamina. Reason is attack is weighted more in CP so low attack allows you to fit in more stats. The exceptions are if you’re playing master league (no CP limit) or the Pokemon has such low BST that they’re under the CP limit of the league even when maxed out, in those cases you want 100% or close to it as possible. Though don’t get too bogged down on finding the Pokémon with the best possible IVs. The actual species and its moves are more important.

Do routes and utilize buddies. You just get a lot of extra stuff from that. Routes especially. They have a chance of giving rare candy XL and elite fast TMs, the latter of which is otherwise one of the rarest items in the game.
You can make your own routes, so make some routes that are convenient for you.

And I suggest getting into pvp. If you can make one decent ultra league and great league team, and you utilize tanking (some other anon will surely share the infographic about that) you'll be swimming in rewards in no time, and it's also the only way of getting the ever elusive Elite charged TM consistently.

And most importantly, utilize some kind of raid finder like pokegenie or leekduck to host raids and/or do remote raids. It's a great way of making friends (and you'll definitely want friends with remote trading in the game), and are the best way of doing raids.

Only 2 things:

1) I can't stress enough how good doing at least 1 raid a day is. Host the raid on Leekduck/Pokebattler/Poke Genie (the one I use) and remote raiders will help you complete it (even if your team sucks). This is the easiest way to get good and high CP Pokémon early on. You will also get a ton of xp (and to a lesser degree) friends to exchange gifts with. This is a game changer.

2) Get into Tanking. Tanking is reaching the PVP rank 20 (investing the minimum amount on your PvP Pokémon) and staying there to farm resources. For that you follow picrel. PvP is the mos lucrative "mode" the game has, you get a bunch of dust, rare candy and possible legendary encounters. You are pretty low leveled so you won't be participate in every league. What you should do is check https://pvpoke.com/rankings/all/ to see the best PvP Mons of the league you wanna fight in and use whichever ones you already have that are close to the max CP (1500 for the GL and 2500 for the UL), even if they are in the top 200.

Pretty good newbie team I'd recommend getting is Gastrodon, Furret, Wigglytuff in great league Solid coverage. Flexible. No rare Pokémon. No elite moves. No XL candy requirement. 3 normal charged moves is definitely a weakness. But it's definitely something your Gastrodon will help you overcome.
Tho you can definitely make many other teams that are cheap and good like this.

PvP rewards are mainly the dust (which doesn't occupy bag space), rare candy (which you can immediately throw at whatever legendary mob you think will be good) and other miscellaneous items like Sinnoh stones (which you can just trash).

If you started/came back to the game after at least a 3 month break, you can input someone's referral code for some extra goodies afters completing certain milestones. The player who gave you the code also gets some goodies when you complete said milestones. It's just that.

Gen 10 will have a valentines day legendary that requires you to have gone on 200 dates before you can catch it
The shiny requires having 20 max level lovers (video proof required).
