I've picked up a habit, of resting my palm on the bridge when playing fingerstyle.
On the one hand pun not intended it allows me to use my pinkie for the E string, and offers stability so I'm more accurate and faster when picking.
However now I've advanced further and coming across stuff like dead notes, palm muting and plucking the strings lower and higher for pitch control I've run into a hurdle.
Should I train this habit out or just continue playing with how I'm most comfortable?

it’s tough to break that habit but don’t do that
you will want to be able to palm mute and i think you will find it easier to play when you can move your hand, especially when it comes to using your thumb on the high strings which is uncommon but enables you to play basically twice as fast on those strings. it sucks but the earlier you break that habit the better
you are also limiting the tones you can produce from your guitar if you use your right hand in the same spot every time. try playing something towards the bridge and then near the 15th fret to hear the difference

proper classical technique is don’t anchor on anything because if you touch the guitar’s soundbox you will be removing overtones. it is hard to hear but there is a difference. i don’t think that is realistic for more modern and developed styles where you tend to play more with your right hand than left hand (think banjo)

i anchor my pinky on the soundboard
it does have a small effect on tone (acoustic) but i find it really helps with very difficult stuff and still allows for me to adjust my right hand position up, down, forwards and backwards

you really don’t need to use your pinky for 99% of music. look up how the tendons in your fingers are connected and try it yourself. your pinky and ring fingers are very very dependent on each other and you will lose a lot of control if you try to use them seperately. just use your ring finger if at all possible. trying to play five different notes at the same or similar times is almost always easier with muting on your left hand and strumming. trying to play with your whole right hand is obscene

I've been learning electric for like 2-3 months now, I can play some chords and songs but thought that an acoustic would be better for learning some theory (scales, notes etc.) and wanted an acoustic in general.

No I used to suck at this and got good. Learn the guitar part so well that you can play it without thinking and then SLOWLY add in the singing. Repeat over and over but do it in small fragments. Nope, the audio interface is seeing a tiny instrument level signal, not even close to 30 watts let alone the 150. If you're using solid state gear then your power doesn't really matter anyway beyond it's ability to drive speaker volume without clipping.
