Making an asset game-ready is making it fit an engine's needs. So you have to decide on an engine. Then once you know you're making stuff for engine X, it's just a matter of looking up what engine X needs.

first i want to create a good portfolio, and i love stylized characters, so i'm going to specialize in those

You're not going to get one.
Yt tutorials are mostly.made by people who don't lnow what they're doing anyways. They learn a trick. They explain the trick. And make a slick thumbnail.
Pick the platforms you want to use and get the books published by the creators of the software.

Abbreviated and stylised game assets are not significantly easier to make than hyper detailed high resolution ones.
You still have to rig. You still have to uv unwrap. You still have to make textures and materials. All of that doesn't care about the detail level in the mesh.
