Have some friends, and we make plans sometimes and i absolutely FUCKING can't stand when shit is cancelled. I'm not saying about some big holiday plane flights but just regular going to someone's house and watch movies or some stupid shit like that.
Just today i got absolute fucking mental breakdown/meltdown like some manchild because she cancelled plans and we moved it to sunday (i didn't go batshit crazy or scream at her/throw tantrum as i don't do it) but was really mad in my apartment and couldn't study or do anything productive because i overthinked for some hours and been mad.
How the hell not to care?

you can't not care about something that bothers you. Instead think about why it bothers you and handle it maturely. Clearly you know you are overacting but what's the reason for it?

I would highly recommend you read how to stop worrying and start living by Dale Carnegie, his words would help you a lot.

People are just flakier these days because there is no social punishment for being a flaky cunt like there was 20 years ago. You'll need to accept that if you want to keep your wits.

I think a good strategy in the immediate term is to have three things planned for every major event. So you'll have your social activity, and then maybe you have as your backup that you'll watch a movie or read a book or go to another social event you're not 100% committed to. This will give you an immediate backup, and more importantly, if your friends decide to be assholes you can text them back and say sorry, you changed plans so I changed mine. Which makes you look not so desperate and obsessed with the meetup.
