My daughter is now 18 so I can't really protect her like I could before. She has a new boyfriend who's slowly manipulated her into changing her personality in favor of what he wanted. She no longer says she wants tattoos or to do a lot of the stuff she previously wanted like rave concerts. Also he is telling her her professors are saying bullshit when it comes to a lot of the stuff for the education im paying for. This man is a Catholic and is using religion to control her.Is there anything I can do about this or is this an example where parents don't matter?

OP calls it manipulative but OP thinks his own daughter is a transaction, her value only monetary (notice how he whines about how he doesn't like the BF for calling college bullshit, how OP doesn't mention anything about her financial security, he just talks about how her education cost him money and that's why he is mad.) He is a man who only has money to give, but not actual love.
