At what point in a sexless relationship do you just cut your losses and break up?
Talking about it doesn't help, she just gets angry and tells me it's because x, y and z and that I don't really care about her. When she calms down she says we will do it soon, except we never do. It's been 6 months. Also kind of hypocritical because at the start of the relationship she would sometimes lose her shit if I was too tired to fuck twice a day, now she acts like it's completely unreasonable to expect any sex at all, ever, from my GIRLFRIEND
Also she rejects every single one of my advances. Sometimes she gets turned on from me kissing her neck, but then shuts me down, almost in a "I know what you're trying to do!" sort of way.
I legitimately don't even know how to explain this behavior. I went through her phone, she doesn't leave the house and I work from home, so there's no way she's cheating. And neither of us have gotten fat before anyone asks

To address your question: you need to talk to her, in a way that is not even slightly accusatory or critical; say you're not trying to be pushy, but obviously things aren't the way they used to be, something has changed, you just want to know what it is, and if you can help. And do not say shit like this:

It *is* unreasonable to *expect* sex. Of course, in a healthy relationship, quite a lot of sex happens. But also, in a healthy relationship, both people have an absolute right to say "no" on any specific occasion. Neither person ever has a right to expect it at any specific moment.

Most likely, there is a way forward with this, but it's going to involve seeing a sex therapist together, and/or couples counselling. For that to work, two things have to happen: 1) She has to actually want to try; if she doesn't, there's no probably no hope, and you should indeed be thinking about leaving her. (I guess that's the answer to your question). 2) You need to stop being an entitled prick, and accept that the situation is probably at least partly your fault; stop looking for ways to blame her, and start thinking of this as a problem that the two of you need to work together to solve.

Update: problem solved. For posteriority, all of that therapy-speak nonsense was useless. What solved It was squeezing her tits from behind after we went to bed. I actually misinterpreted things, she rubbed her ass against me by complete accident, I grabbed her and she got in the mood.
