See this girl working in walmart, looks to be maybe just shy of 30, blonde, homely face, thick and again, works in walmart.

How do I just go up to her and say in no uncertain terms "I find you attractive, I'm Anon, would you like to go out for a meal some time"

No wedding ring, and she works in wal-mart, how great could her life possibly be? Maybe I could offer her something

I even went there again today, saw her working there, but I was too chicken shit, this just feels so creepy

Yeah, it’s certainly not recommended. I think as long OP introduces himself, expresses interest, and can handle rejection it’s no big deal though.
What really sucks is being hit on with an expectation to reciprocate at work. Like, don’t flirt with her and try to carry on a conversation. Even if she did want to talk to you, you’re opening her up to getting in trouble.
But something like “hey, I’m Anon and i think you’re really cute. Would you want to hang out some time? No big deal if not”
That’s to the point, low pressure, and just make sure you don’t react to any ego bruising. Handle any rejection with grace.

I've been there, anon. It's tough when you're talking to someone who's working because part of their job is being nice to you. Just make eye contact, give a brief smile, and see if there's any interest.

Make a light observational comment about her or your surroundings to break the ice. Then say you're in a rush, but you wanted to introduce yourself because you liked her vibe. Ask her something about herself and see if the conversation flows naturally.

I dated a girl who worked at Burger King for a few months, and it all started with some nonchalant small talk. No big pickup line or grand gesture.

It is very rude to put someone on the spot at their work place. She doesn't know you and you don't want to know how many men would take revenge by filing some bullshit complaint about her if they're told no. Or even just making a scene that makes her look bad (her boss likely will not care what she did or didn't do, only that she did not manage to avoid the scene). If she works at Walmart, she probably really needs that money.

You can show interest but do not make her say yes or no then and there. If you really do not want to give your number instead, say something like "I would LOVE to take you out sometime" and flash a big smile before leaving right away, unless she answers with an immediate smile/yes. Any other response, any pause and you bounce right away not awaiting more.

Also just saying but your description makes it sound like you want her because you believe she won't be able to do better and that's... not ideal.
