We gain wisdom in the form of understanding when we use reason impartially, and then we cement wisdom into the virtues when we turn aside from our own irrational desires for the sake of acting on conclusions drawn from rationality. Justice, generosity, compassion, patience, courage and so on are all just expressions that arise when wisdom, or objectivity, is the motivating factor behind an action rather than personal passion.

To be wise is to cleave to and act on truth, so absolute wisdom would be nothing other than Truth itself. We can't become Truth, but we can act in accordance with it, and we become wise, happy and fulfilled insofar as we achieve that goal.

Senses can't be trusted because they're fallible, but they are useful as long as they're bridled by reason. A common example being a stick submerged halfway in water. If you trusted your senses fully, you would be forced to believe that the stick is bent. Reason will tell you, though, that the stick looking bent is only an illusion caused by refraction. The best way to avoid mistakes is to study and exercise the usage of your reason, which there are plenty of options for in the fields of critical thinking and logic. I personally like Celestine Bittle's 'The Science of Correct Thinking', but anything ought to work as long as it's not too modern.

It's also worth holding on to the idea that mistakes are inevitable, no matter how thoroughly you study and practice beforehand. That's not a bad thing, though, because those mistakes are themselves lessons to be grateful for. Each time you make an error, as long as it's an error made in good faith and not one that's the product of ill will, then you'll have learned from it almost the moment that it happened. The only way to cut off your progress towards Truth is to persist in your errors out of pride, either because you hate to admit you were wrong or desire to uphold a belief whether or not it's true.
