How do I release a game while staying anonymous? I am not hiding from the feds or releasing something with questionable content or whatever I just don't want a bunch of people scrutinizing my life/stalking me. I heard about anonymous LLCs (like in Wyoming, I live in the US for context). Is that the way to go? Steam would be my primary platform but I am not opposed to also releasing on itch.io/GoG/Epic if those are not too difficult.

Bare minimum this means having someone on file to send documents to, so they'll need a name and address - though you can use a P.O. box for this purpose I'm pretty sure. Developer information isn't really available (at least not easily) to just regular users of Steam.FWIW I released my game as a single proprietor and no one's doxed me.
