I haven't played videogames (regularly) since 2016. I am 26 years old now. My attention span is short and my mental bandwidth is low. I can't bother spending hours learning some random game's mechanics, it's a colossal waste of time.
I grew up with simpler 2000s games and now most of the games I actually enjoy are old, abandoned, and barely work on Win11.
So in a nutshell gaming has become a hassle instead of a hobby but I still want something enjoyable, rewarding, and engaging to do on my laptop.
When I come back home I feel extreme boredom since I have no one to talk to. I spend my time on my laptop doing literally nothing. Just scrolling not paying attention.
I need something to keep myself busy with. Something grindable, and obviously, valuable. Stuff like coding (but I think I am too old now and the ship has sailed for that, right?) or language learning?
What to do?

Drawing = no.
The rest are so great but I feel overwhelmed because I want to do them all. I can't obviously, because again my attention span is short and I start suffering mentally 30 minutes into anything, so I need only 1 of these things.
I like cerebral stuff - learning, using Anki, taking notes, but obviously for stuff that aren't mandated (Uni). What do you suggest for me in particular?

If you can, do some physical activity, even if it's just walking alone in a park or something, or do word searches and crosswords. It's unironically one of the best things you can do for yourself to get your focus back.

its okay to be bored and it sounds like your life would improve if you just closed the laptop and stared at the sun for a bit or did something offline. in other words, it sounds like you got bigger problems than what you're describing.

there's no point to learning a language if you're not going to use it and find others online to talk to about it. you can sign up to hellotalk or whatever to practice language with foreigners.
go join a club or something where your time is dictated by others, cause you seem like you're a bit too in your head right now and could use and astronaut to pull you out of your personal orbit for a while.

I walk for 2 hours (literally) everyday. Like 10,000+ steps (watch tracker).

I actually love English and want to learn to teach it (it's not my first language) and then I would teach it on YouTube or something for free, without showing my face, but I am scared of people making fun of me or that my videos would suck or that it would be the wrong thing to do, etc.

Also an idea I got floating in my head is that I would search for some humanities-related field (psychology? sociology? history? political science? etc.) and I would use AI to research and curate a full uni syllabus and then I would self-teach myself those things for fun.

For example, for political science I would see what's the best uni in the world that teaches it and find a way to know its full program and what textbooks are assigned and just read them and use Anki/Obsidian/whatever to master this topic as much as I can for leisure.
