My female cousin is marrying soon, I want to give her a gift. I was thinking about a kitchen knife that will last a long time, but I'm not sure about what to chose. Budget is like 100-200€, I'm in europe. Would be sad to just give her the money...

I'd not recommend buying things when you don't know what she needs. Give her money or Ikea gift card.
It's not that knife is a bad idea. The thing is you don't know if she needs a one

Then make some origami and put the money in that origami. Be creative, but don't spend money on things that she might not have any use for.
Ask her what she would like, be direct, she's your cousin afterall.
