I think I have an amphetamine problem.
I am prescribed amphetamine for ADHD and it helps, but when I take it I become quite manic and euphoric and it makes me want to take more so I end up taking more than I'm supposed to or doses too close together and then I stay up all night or don't get any sleep for a long period of time or end up gooning for like 8 hours straight and talking with large language models.
I don't know what to do, but I'm realizing now that this is a problem and I can't keep living like this.

That strongly suggests your dose is too high.

You could also ask your doctor to try switching you to Ritalin.
