Normal house flies are good at calculating and executing the best avoidance movements. They don't always go forward.
The real trick is to swat them from the thin blind spot directly behind them.
THEN they will go forward with a delay and you can get them if you aim ahead.

I catch the air a few inches above them, usually scoop the fly up as well. Swatting them smears fly guts on things, catching them is better. You can then crush them if you want or let them outside to go land on some more poop.

You can trap them with a bright flashlight. When they land shine the light on them and slowly close the distance until you have them trapped between the flashlight and surface.
