Pigs only smell bad when they're confined to small areas and forced to wallow in their own shit. With enough space they make designated shitting/pissing areas and avoid shitting where they sleep.
They can be quite "dirty" because they love slopping around in mud to keep themselves cool and use the mud as a natural sunscreen, but usually mud doesn't smell bad like shit does.

Any sort of factory farming is going to smell awful from miles away. The actual pigs dont smell bad at all, and some even have a gene that makes them smell like maple syrup. They just smell like dirt most of the time. Oilly coated dogs, intact male goats, and wet chickens have a far more pungent smell to them.
Proper land management, deworming protocols, and correct handling/preparation reduces the risk to almost zero. People eat raw ground pork in germany and are totally fine.

Trichinosis is extremely uncommon in germany and the US. The statistics I found say that toxo is the no.1 parasite in germany, estimated 50% of the population has it.
Theres an average of 15 confirmed cases of trichinosis per year in the US. Call it undereported and say there's 10x or even 100x more infections, still inconsequential. Compare that to salmonella, which has over 1 million confirmed cases, 40k+ hospitalizations and around 400 deaths per year.

Again, the pigs themselves do not smell. If you stand near their shit spot it smells. If you stand where they sleep it doesn't smell. Very similar to most farm animals.
Rotating pastures every 7-12 days keeps the smell down remarkably well. Pig shit does smell worse than cow shit and less bad than chicken shit imo, but overall the persistent/wafting aroma or whatever you want to call it is no worse.
The real problem is keeping too many animals in confined spaces of sterile land. Having 20 medium sized adult pigs, and 80ish pigs aged between 1-5 months old on 5 acres will never concentrate shit to the point that it actually starts to get disgustingly bad.
At certain times I will confine a small group of pigs to a holding pen/stall area, and the smell becomes bad quickly if you dont add straw everyday to their shitting area.

Regarding your other point I have noticed at certain times with certain pigs I do sense a weirdly high level of sentience, but it's somewhat uncommon overall. There eyes are rather human like as well. I wouldn't be suprised if you were right about the genetics stuff, but they are still definitely livestock/domesticated animals.

I have lived near holistic rotating pasture tradmaxxed farms with pigs. It does not. Conversely I have to be within 15 feet of a well maintained, gravel or “activated woodchip” bedded chicken run on a hot day to smell anything and they’re common in suburbs because of this. One of my neighbors has a few sheep. They also don’t really smell. Pigs? They stink.

There's nothing bizarre about it. Humans and pigs are both mid-sized mammals that have adapted to eat basically anything but descend from ancestors that were mainly herbivorous. Of course we would have anatomical similarities.

I have 1000 laying hens on rotational pasture and it smells significantly worse than the pigs, probably 5x worse than the pigs. Partly because we use a more land intensive system that requires more frequent moves, but also because chicken shit is just worse smelling than pig. One particularly bitchy old lady neighbor even complained to us about the smell when we only haf 500ish birds.
Small backyard coops are not what we're talking about. I doubt any pet pig owners get smell complaints from their 1 or 2 pot bellies they have shitting in their backyard either.
Never heard any complaints from pig neighbors with similar distance to their houses.
Call each chicken about 5-6lbs of biomass, so 5k-6k lbs total weight. 100 pigs I'm estimating at around 10k-12klbs of biomass. Feed rates are very similar between the two groups of animals, which roughly determines total shit/nitrogen deposit on the land excluding the pigs additional forage.
I've never noticed smell from small scale pastured pork before I started my own.
The overall smell of a pastured pork operation could boil down to a matter of opinion, so it's whatever. In terms of pure smell generated by non factory farmed levels of animal density I've always noticed horse stables to have some of the strongest smells even if they are relatively inoffensive.

And yes, I have gotten within inches of some of my pigs to smell them because I was curious if they had the maple syrup gene. They smell like dirt. Intact male goats are actually stinky farm animals that you can smell from a distance.

You've got to do the same thing in a barn, sure, but your cows and horses are mostly eating fiber so they're just big patties that don't smell great, but on the scale of poop-stank, are near the bottom.
Goats and sheep just shit those little pellets that you can just sweep out onto some grass where it breaks down pretty quick and fertilizes the soil.
But pig shit is just always awful, its like a person just took a sloppy shit after eating trash.

Yes pig shit is worse than goat or sheep for sure. It's nowhere near as bad as human shit tho. I'd say it rivals dog shit, but pigs mostly eat a vegetarian diet and pasture pigs eat loads of fiber, so it's different.

Keeping roughly 10 full sized pigs per acre like I do really doesn't smell at all. It's very rare that I'll be outside and get a waft of pig shit blowing in the breeze, and I know I'm not entirely noseblind to the smell because I will occasionally get pig shit on my boots and can 100% smell that.

Adult pigs can eat 6-10lbs of food in one sitting. Pretty accurate number.
My pigs are 100% organic fed, so I couldn't. Integrity is an important part of what I do as a pastured pig farmer.
