I'm supposed to believe nobody ever dug up a large dinosaur bone and displayed it? People thought giants existed forever, so finding a bone you assume to be from a giant would be an amazing discovery and holy artifact. None? Nobody ever found one until 1699?

Something people would be looking for forever and would be seen as a religious artifact was never ever mentioned by anyone, except a chinaman 1700 years ago and a guy in 1699?

Seems like a giant scam to me. Plus the vast majority of display pieces are fake. The actual fossils look like worn rocks, and the rest is extrapolated by "scientists." They even make reproductions where the bones are half cast in plaster, so it looks like real bones they found in a rock. What an insane way to mislead audiences. Making shit up and lying to the public is not science.

Pre modern people weren't digging in the ground as much, and when they did find fossils it disn't surprise them because every culture had some mythological conception of dragons or giants or something, so people mostly just went about their day or ground up the fossil to gain its power.
People have really only known about animals in a biological sense for the past couple of hundred years. Nobody knew that storks migrated or that insects didn't spontaneously generate inside of carcasses until very recently. So when industrial Europe started digging up dinosaur fossils, they only identified them as dinosaurs because there were people systematizing existing animals and comparing their bones against the ones being dug up, and even then they had no idea how old they were or why there weren't any animals like them around today, so they still used the bible as a reference point.

You have some misunderstandings about history. For most of Europe's Christian history there was only one holy book and there was no argument about it. They'd have no reason to keep bones as proof because there was nothing to prove; their beliefs were a matter of faith and even if they wanted to convert a pagan they'd have no use because the pagans also believed in giants.
They did find remains though and assumed they were from dragons and other monsters. Pic rel is the bones from the Dragon of Wawel hanging from Wawel Cathedral in Poland as an example. Before that we have records of people in antiquity finding shit.
