Were there any land animal in Hawaii prior to the Polynesians discovering the islands, or was it wholly populated by just bird and lizards that could fly/swim all that way into the middle of the Pacific?

Yes.
Everything there had flown or swam, though I suppose some stuff may have rafted there.
There were birds (mostly ducks and rails) that had evolved flightlessness and effectively became land animals that couldn't leave the islands, but their ancestors had all flown there.
There were no lizards on the islands at all, the only squamates were Sea Snakes.
