What did dinosaurs look like?
They survived so long and in so many places they probably looked like everything that anyone has ever imagined and tons of things nobody has ever thought of. Also almost none of them fossilized as a percentage of those that existed. Rocks preserve only tiny snapshots of very specific times and places. So if we could see every single species that ever existed there would be millions of different types instead of the thousand or so we know of.

This is true but we can still know a lot more than you'd think just from the snapshots we do have. For one thing the continents were much closer together up until the Late Cretaceous so the kinds of animals that existed across most of the world were probably largely similar, it's not like today where if you could only see Australia you'd have no way of knowing what kinds of animals were on other continents.
