>>24756600>I've been curious about trying to make biltong, any tips?Not much to it really, depends on the meat but for say kangaroo which is a decent baseline, half an inch thick strips, cut off all the skin, any fat etc, you just want meat, rub it down with apple vinegar, salt, vegemite (unironically) or whatever spices you want, stick it in a bag or a container for a day in the fridge to let it all soak in, then you've got two options, hit it with another round of salt and then air dry it somewhere clean and dry for 4-5 days, or stick it in the oven for 8-10 hours at 140°F ish, real low for an oven, otherwise grab a cheap food dehydrator and use that, same temp and time, they're also great for fruit etc as well.
