Geologist here, I just spent 5 years in environmental consulting up to my dick in haz waste. I walked away knowing how to install drinking water wells. My community college geo professor was the most apolitical guy to exist, and he warned us all we'll see water wars in our lifetimes back in 2012.
Most water demand is gonna come from AI data centers. Find companies that build water cooling systems for power plants and desalination companies that purify seawater once all the freshwater has been used for big data.

In a long enough drought even the yield of nearby lakes can be exhausted. I lived through a bad drought in Texas in the 00s. Cities would drive around and write expensive citations to anyone caught watering their lawn. This is what happens when rain doesn't refill the lake. Water rationing is real and possible in your lifetime.
