Is this an american thing? never seen thid issue in a kitchen since the oil is filtered and reused or disposed of by some company.

no its a lazy retard with lazy shit manager thing. i also wage at a fast food joint and we clean/wipe it down nightly, even during the shift if needed so it doesnt puddle/crust up. this just looks like they do it once a week.

When I worked at Taco John's I dumped a large cup of ice in the deep fryer at close. Nothing happened for a minute, then it bubbled a little, then a lot, then it boiled over, every ounce of oil ended up on the floor.
i left it overnight, squeegeed it under the counter, mopped the floor, and ignored it for a couple of weeks until the owner saw it.
