At least twice a week growing up my family would have cabbage stew. It was usually a lot more bland than the picture implies. I can't bring myself to eat it anymore. My parents aren't even eastern european so I don't understand why they made it so much.

You can't fuck it up. Almost any beef will do, like the cheap trimmings they call "stewing beef" sometimes. Doesn't need to be wagyu steak. Throw a cubed pork loin chop or two in there too for variety. And a dash of red wine if you fancy, to get the cow out of the beef. And two-three sliced hunters sausages is you can find them, otherwise just any Polish sausage. Just brown the meat slightly first, browning meat is the first thing you should do in your stew pot when making bigos. If you have access to proper smoked bacon then great, if not, a handful of Costco bacon crumbs will do fine (add that once the cabbage is in).I like to do half and half fresh cabbage and sauerkraut. Squeeze the sauerkraut into a bowl through a colander or whatever, and roughly chop it up more finely, about every half inch. Once you're cooking, use the sauerkraut juice to adjust acidity to taste.If there's any leftover sauerkraut juice, refrigerate it and drink in the morning for breakfast. Don't fucking dare dumping it in a drain or I will find you and I will kill you. A few all spice grains, a few bay leaves, and a few juniper grains if you can find. A tablespoon or two of tomato concentrate for more robust color, and same amount of honey optionally to balance out acidity.Slow boil for however many hours you want, it gets better every time you re-boil it the next day anyway.Serve with a plain or lightly buttered slice of sourdough.

There's this Asian recipe I had that was mostly soy sauce, sesame seeds, green onions, ginger and pan fried cabbage and tofu that was surprisingly good and I don't even like tofu. You press the tofu, marinade it in soy sauce and pan fry it and the cabbage in roasted sesame oil but I don't know if that meets your 1/3rd cut off especially since it's served over rice. I fucking love cabbage though. Oh, saurkraut and sausage, sauerkraut on sausage, sauerkraut on hot dogs, suaerkraut and pierogies, sauerkraut in pierogies. It's so good.
