recently came into possession of large quantities of those funny looking cucumbers, doesn't seem like I'll be able to resell them soon. any suggestions on what the fuck to do with them? I was thinking maybe drill into them and stick them with rice and minced meat but what do I do with their insides
Calabacita/calabcĂn are safe to eat raw as long as you rinse them thoroughly since the rind is sticky. Peel it or don't, it's up to you and your digestive system. I peel them, cut into medallions, and steam with a potato and carrot and eat with a side of scrambled eggs.

I cook them in the oven.First you cut them in half and take out all the seeds and soft flesh (not the more hardy flesh) with a spoon.Then you sautee some meat or tuna with onions and garlic, maybe some cherry tomatoes too, making a mince to fill the pumpkin(its a kind of pumpkin). Then you fill the voided pumpking halfs with the mix. Finally you make a bechamel sauce in a pot, then cover the mix with it without overfilling.Put in the oven for 30 min (I dont know at what temperature, mine is gas) and voila, you have pumpkin lasagna.

Moussaka with zucchini instead of eggplant is quite nice. Unlike with eggplant you don't need to salt and fry them.If you have large grown out zucchini you can also make cordon bleu with them.

i put them in spicy veggie gnocchi, make sauce out of sour cream/creme freche and chili paste and toss whatever else in and voila
