1st post here. slow food thread, so i've got SNAILS for today.fresh harvest after rain>clean from dirt and debris>cook 30min.>remove from shell & clean shit and other organs. leave just the muscle>cook ~90min. with herbs, garlic and vinegar>dry a bit>fry in LARD, garlic and herbs for ~15min.my picky GF liked themalso, cast iron is based

>>22030848starving them makes the muscle more tender, softer. they are good, but don't eat too much of them. they have some earthy, specific taste, that's why they are mostly cooked with a lot of garlic and herbs. also very long and painful to clean them.

Darkened a roux over the course of 30-40 minutes and then simmered up some red beans and rice for another hour and a half, came out very nicely, lots of body.

On top of that their digestive tract is so simple it contains all of the waste material as well. Because their digestive tract is so simple and robust, it gets rid of all the dangerous garbage in a matter of days.
