I'm contemplating courting a vegan girl. I know very little about vegan cooking and I would like to cook her some extravagant and substantial meals. Perhaps potato and mushroom function well as meat substitutes in a lot of occasions? I also want to know more about vegan desserts, as my fundamental understanding for most pastries, baked goods, or sweet filling relies on dairy cream or egg.
Can anyone throw some good suggestions, off the beaten path ideas, or good substitutes for typical meals?

It's pretty easy to make vegan cakes/cookies. Just use oil instead of butter, applesauce or another egg replacer. Coconut milk/cream works well instead of dairy. Vegan desserts might be one of the easier things to make.

For flavor yeah, some people may find it not very filling though. Some people get satiated easily by starch but others don't. Obviously you can use stuff like tofu or fake meats but nuts and seeds are good for adding something heartier to a dish with healthy fat.

African peanut stew is something easily made vegan and I prefer that version of it since the peanut butter is already filling enough. Plenty of vegetarian Indian food could easily be made vegan by just using oil/coconut/tofu instead of dairy products. Something like Thai green curry with tofu instead of meat/fish would probably be pretty good. Nachos with beans or fake taco meat and salsa/guacamole. Peanut butter or sesame noodles. Ful medames without the egg.

My sister is a vegan and she likes my Mexican rice.
>Blitz a can of tomatoes in a blender
>Make up some vegan chicken stock (you want 3 cups of liquid including the tomatoes)
>Rinse one and a half cups of rice
>Fry an onion in olive oil
>When translucent add rice and toast until golden (add more oil if needed, you want to coat the rice)
>Add chopped garlic and jalapeƱos, a teaspoon of cumin, teaspoon of ground coriander and a teaspoon of smoked paprika
>Season with salt and pepper and fry until fragrant
>Pour over tomatoes and stock and stir
>Simmer with lid on for 15ish minutes or until liquid evaporates
>Take off the heat and let it steam for 10 minutes
>Add a chopped green bell pepper, black beans, corn kernels, chopped cilantro and lime juice
>Stir everything in then serve with hot sauce if desired
I love to reheat the next day with cheese on top, and/or a fried egg and hot sauce.

Sister is vegan, gf is vegetarian. Vegetarian cooking is more tedious to achieve something that is at the same time good AND nutritionally balanced. You can't fuck up seasoning, and I'm not talking about just salt. You have to get the best out of every ingredient (cooking technique, doneness, texture). Pastry is even more of a headache but there are some smart tricks and techniques. If I were you I'd start to practice long before the first meal.

I personally have tried being vegan years before as an experiment, and while it's feasible I found that restricting myself from the naturally omnivorous pallet I was born with was too annoying and fut me off from good food opportunities. That said I have shifted a girl from veggie to eating meat once and that was cool, hopefully this girl would be open to it one day too, though I need to establish (to you strangers online for some reason) that I don't have am objective of changing her nor expect her to change in this regard. Pumpkin seeds can work. I'm not vegan but was interested in making "sikil pak" lately which is basically a salsa and pumpkin seed pesto. That would probably be good on pasta or just for a chip dip. Walnut "meat" is also an option, just make sure you simmer it long enough for whatever so it actually softens which can take 1-2 hours.
