>>22033376picked at different stages (ripe vs unripe) and processed differently (dried vs fermented) this gives black the signature 'spice' and pungency with a bit of retained fruitiness from being unripe similar to straight up green peppercorns, whereas the fermented whites are more mild in 'spice' but have a fermented funk and distinct earthiness that lends well to a lot of asian cuisine and certain sauces where the strength of the black would be too muchwhen i say they're often used totally incorrectly i'm largely referring to the timing of adding them to dishes. with black peppercorn in particular, the advice of seasoning dishes at the end is more important than usually credited, as a lot of that pungency and flavor distinct to them is destroyed at high temperatures. conversely, white pepper is usually meant to be added earlier or in marinades/sauces to tame the funkiness a bit and keep the overall profile mild - too much white pepper too late into a dish can be kinda gross, too much black pepper too early into a dish can seem like it's not even therethis entire discussion always leaves out green peppercorns which is a shame, because they're in another class of their own and great with unique dishes, namely breads and desserts. i make a showstopping pistachio green pepper chocolate chip cookie and think it's a shame it's so slept on
