So I bought real vanilla ice cream from a store brand, so it was super cheap but tasted pretty great. After a few months in the fridge, it became disgustingly chalky. Does anyone know why? Iirc, it didn't have a ton of fake ingredients or preservatives or special emulsifiers. Only eggs to emulsify, but it wasn't custard-y
