I used to have a bottle of kikoman soi sauce that was old as fuck. Who knows how old it was. The soi sauce had become extra thick and dehydrated. To the point where, when I bought a new bottle, I was suspicious of kikoman changing their formula or watering their soy sauce down. But yeah now that its gone I prefer the hyper concentrated soi sauce. I think it was a secret ingredient that made my fried rice slap extra hard
