I make a lot of steak & shrimp fajitas and I just use thin sliced ribeye so that it’s tender enough that you don’t need to marinate it. Just throw it on the grill and hit it with whatever your favorite Mexican dry rub is.

Cumin, oregano, + black pepper is the classic trio. Even if you have garlic (optional) and onions and peppers sauteed, nothing wrong with a some garlic and onion and paprika powder either. Or do white pepper instead. Could add chili powder of choice if you want..Serve with wedges of citrus
