now personally i think fruit does not belong on bruschetta - save your bitching about tomatoes, you know what i mean - and bruschetta itself should be more focused on acidic, spicy, and savory flavors, perhaps with a bit of a sweet, tart, or fermented crunch. this pic shows various peppers on bruschetta, and i think that's a far better idea than the peas in op's pic, though the arugula would add a nice herbal peppery flavor. one of the main mistakes people make with bruschetta is overloading on the tomatoes (or choosing them out of season with minimal flavor) causing the ratio to be deeply unbalanced and liquid/acidic-forward. by adding a crunch of a pickled pepper and a bit of heat, the taste is far more balanced. we know pickled red onions would do well, and i assume so would pickled jalapenos. i wonder about sauerkraut, red cabbage, or various forms of kimchi. maybe radish would work better than cabbage for that, or perilla leaves? mint, maybe, cilantro? basil is a classic but what about something more exotic, what about mustard or dandelion greens? maybe with a spritz of citrus, like a bit of lemon, lime, or orange zest, or maybe slices of different colored grapefruit? what do you think, anon?

Remember, Im a server too. I would have told the customer I would ask the chef. in reality Id tell the line cook to make it that way, not even ask, just say they want badic bruschetta. the tomato and basil is already prepped, they just need to toast the bread. they didnt even consider to ask back of house. just dug their heels in no matter how i explained thats it absolutely possible to serve me toasted bread with my choice of toppings. to this day i think back to this and wonder how customer service has gotten so bad, and why this valud retard seemed to believe i was trying to trick her.
