depends how far you want to take thema lot of lentil dishes call for lentils to basically become creamy, almost custard likei think some lentils are much more hardy, they won't totally disintegrate but if you continue to cook them past the point of being tender they will break uptreat them like potato, if you keep boiling potatoes they become mush

Try French green lentils, they're like brown lentils but hold their shape even better. I don't bother buying anything else.
