You mean convincing a large portion of their population to dedicate their entire lives to putting raw fish on rice so that their country can have one of the highest recorded rates of fish parasitism.
And also some westerners can go to eat sushi every once in a while as an exotic treat.

went to Japan and the best food I had was slapped together sushi made by an obese woman in her 20's she made in like 5 seconds for each one

to be fair, the westerners just immediately filled it with cream cheese, deep fried it, and poured every possible sweet or mayo-based sauce they could find on top. nature finds a way.
