Mafter is the gold standard for carbon steel. But you should probably figure out if you like carbon steel first. Don't buy a Ferrari if you can't drive a VW. I would buy a cheap cast iron pan first then see how you enjoy seasoning it every use. It can be a pain in the ass. And you can always use the 20 dollar lodge for stews and pizza.

And like some other faggot said, even if you end up loving carbon steel, you'll probably end up using a stainless pan more often just because they are so much easier to take care of.

wtf, carbon steel pans have always been pretty cheap, kinda like raw cast iron skillets.
I own a 28 cm Debuyer Carbone Plus pan, which is also high quality and made in France, but I paid like 30 eurobucks for it. The main difference compared to Matfer is that the handle is riveted, but it's not a big deal for most.

I don't have a matfer but I do have a Darto 4mm no.30 and I love it. The gimmick is that it is a steel plate that has been pressed into a pan shape, there's no weld or rivet to fail. But that makes the handle heavy so if you don't strong enough then aren't buy one.
If you want to have all nice pans, you are starting out the right way, this skillet will meet almost any need you have of a skillet for the rest of your life.
Just don't leave it wet.

This is what most restaurants use. Cheap, works as a home defense weapon, shield and commode if you're desperate. $30. Buying high end carbon steel is like buying high end raw cast iron (I'm not talking the enameled staub stuff) the material is the limiting factor more than the manufacturer there's no point in paying a ton it is what it is.

Matfer have gone up in price a lot in the last couple of years. Definitely excellent pans but after having owned several, I barely use them anymore. I switched to All-Clad stainless years ago and find that I use those along with my cast irons far more than the carbon steel. True, the CS are the most 'inbetween' pans, I've grown to prefer the extremes of high heat retention, non-stick-ish and durability of cast to the light weight, excellent heat control and versatility of SS.

Cast iron requires more maintenance, SS requires more technique. Carbon steel is like cast iron with some SS behavior.

Lodge for inexpensive cast iron and homeandcooksales for outlet sales on All-clad will get you where you want to be. Ideally having all three and maybe some enameled cast iron just because.

the heat capacity of carbon steel and stainless steel are almost the same, about 450 J/kg•K, while the thermal conductivity of stainless is much worse than carbon steel because of the other metals included in the alloy (15-20 W/m•K instead of 45-50).

Matfers are restaurant pans. They're thinner and lighter and are made for high output gas burners.
Home burners are smaller both in size and output. Makes it difficult to get good even heat. That also makes the pan susceptible to bowing which is a problem with these pans. It's also too thin for worry free induction usage for the same reasons. Get a 3mm thick pan at minimum. deBuyer mineral B (pro if you can) Darto if you're cooky and can handle the weight (and no lid compatibility) or Ikea VARDAGEN if you want value and don't fear china steel contaminants.

Yes bare steel leaches shit into your food. No metal pan outside of the titanium ones are nonreactive enough to not leach shit into your food. Being french I also have to mention that Tefal, one of the leading manufacturers of non stick pans in the world is based in France and has a strong lobbing team. They have been running bots on social media content recommending pans that aren't non stick or talking about the health concerns of such pans to spam damage control comments. They also managed to kill a PFAS ban last year. It's very likely that this is Tefal putting their thumb on the scale considering Matfer has been OK in the eyes of the labs since testing began.

The story is that cookware in France is regulated by their hyper-local governments--think, like US states except French. It would be the equivalent of California making them put a Prop 65 warning on every item sold within the state that they haven't tested for lead. In this case, the regulator tested the pan in a way that was pretty weird - boiling vinegar in the pan for 2 hours. There was also no follow up. For example, Demeyere treats their stainless pans with acid to remove trace metals from the surface. It's likely that further tests of the Matfer pan would result in lower readings, since the surface had been scoured already.
