what the fuck is the point of all these modes when the 1-HOUR WASH button cleans dishes perfectly and saves water and 3 hours of your time?

It pads out the feature list so they have an excuse to inflate the price tag.

Apparently that option uses more water and power to clean faster. If you don't mind the increased cost then yeah it saves time.

I can understand heat dry because it's a little annoying when things are still wet but I don't use it anyway. If you have anything plastic it could damage it.

Sanitize could be useful for fermenting when you have to be careful to not introduce unwanted bacteria and yeast. I think baby bottles need to be sanitized sometimes.

The heavy wash stuff is probably for people who don't bother cleaning anything off before putting it in the dishwasher. Some of them will advertise and dishwasher detergents too that you don't have to bother rinsing your dishes anymore.

Nothing is worse than taking the dishes out of the dishwasher and they are wet and cold. I do the 3 hour wash with a heat dry because it’s the only civilized thing to do.
>>
Modern dishwasher have no heating element so they cannot dry plastic. It's infuriating.

do you have some kind of siberian snow powered DW that uses ice cold water to clean the dishes?

Nope.
I have hard water. I have to run my dishwasher on Heavy for every cycle or things don't come out of mine without grit left behind.
