bunch of celery leaves
5 onions
some dried oregano

Roasted beef and bones for 1hr in oven at 210°C
Scraped fond and put all in the pot
Simmering for 6hr and 10min

5-7 days probably, assuming it was refrigerated soon after finishing.

Remove the outer onion skins and roast the veggies with tomato paste next time, then thank me after you taste it. Wouldn't hurt to actually halve the onions too.

Celery leaves and dried oregano go in last. For no more than 20 minutes of cooking or their flavour becomes muted.

Go in in the final 50 minutes or again the flavour becomes muted.
