I need more greens/ vegetables in my diet but I don't know what to make.

I felt like I needed veges tonight so I just stirfried a bunch. Brussel sprouts, carrots, onion, mushroom, capsicum, serranos, dash of oyster sauce, soy, chilli oil and spring onion, cashews and sesame oil to finish.

Cauliflower cheese is my go-to.

* 1 or 2 heads of cauliflower
* brick of Coastal ("Kirkland") cheddar
* few tablespoons of cream
* few tablespoons of cornstarch
* salt
* paprika (what I prefer) or dry mustard (traditional)
* small amount of sodium citrate (optional)

1. Wash and cut off the florets from the cauliflower(s).
2. Parboil the florets in water with some salt.
3. Put florets in baking dish.
4. Put cream into nonstick saucepan.
5. Break cheese into tiny little pieces.
6. Slowly melt cheese into cream over very low heat.
7. When fully melted, add cornstarch to thicken.
8. Optionally add sodium citrate and/or dry mustard.
9. Stir as little as possible while heating until thick.
10. Pour sauce over cauliflower.
11. Sprinkle paprika on top.
12. Throw into oven to heat and brown a little.

Warning: if you stir too much after incorporating the starch, or if you let it get too hot, or if you wait too long, or if Sirius is in Uranus, or if you're just unlucky, the sauce will "break". Sodium citrate supposedly helps to avoid this but I find it to be hit or miss.

Warning: if you leave it in the oven too long or it gets too hot in there, the sauce can break. See again about sodium citrate.

I find that the sodium citrate doesn't so much prevent it from breaking as turn it into a stringy mess when it does, instead of letting it disintegrate completely. TBQPH I have really shitty luck preventing it from breaking. It still tastes fine, you just have a ton of cloudy water in the baking dish.

okay, well assuming you're not trolling: your diet in general needs to be redesigned, but you can easy pair vegetables with fried chicken. wash some potatoes (leave the skin on - it's a good source of fiber - but make sure you get any dirt off (a vegetable brush will help with this)), dice them, toss with salt, pepper, and olive oil, and then roast them in the oven until golden brown. and don't forget about sweet potatoes. not only are they delicious they're also quite nutrient dense and have beta carotine (that's where the orange color comes from. carrots would also work here). to stick with the Southern theme, add some collard greens as well. like all leafy greens, they are extremely nutrient-rich. here's an example of how you would cook them in a southern way: https://youtu.be/wfh2zFWvGBk?si=gyKKTelsRhbAd6nm

Make chili.
Dice an onion
Mince garlic to taste
Fry in oil of your choice, I use olive
Add chili powder and protein, I use tempeh because vegan
Fry until cooked
While frying, chop and roast red bell pepper and zucchini
Add tomatoes and beans and simmer
Once veggies are done add them
Once the flavors have had a chance to meld together, take off heat and add spinach or power greens, mix until wilted
Et voila, chili. Serve over rice.
