I like simple stuff like nigiri. I am not into rolls, anything with sauce on it or big spices. I went to school with a kid who's parents owned on of the highest rated sushi places in the entire city and he'd eat shitty grocery store california rolls and liked it. It's all personal preference.

>>22042620it's also just a commonly misquoted exaggeration. 10 years isn't the amount of time someone needs to spend to just be a basic sushi chef, it's how long you typically have to train for if you want to open your own high-end sushi restaurant, assuming you have ZERO experience in the hospitality industry and zero cooking experience. you're spending maybe 4 years on learning the ins and outs of managing a high-end restaurant, a few years on mastering basic, cheap stuff like cooking rice, eggs and small fish, then a few more years on how to prepare more expensive fish. since you're expected to work with tons of different species, some of them more complicated to prepare than others (e.g fugu), it's a pretty reasonable number. and it's not like they just spend 10 years at a culinary school, they're actively working under a chef and are getting paid. most 'sushi chefs' don't actually train for 10 years since they generally have some experience with cooking fish before they start working with sushi.
Sushi is the one type of food that I can eat to the point of near-pain and not feel even a bit bad afterwards so I can't ever say it's overrated if you're in the mood to indulge. The wasabi tobiko was new and it was pretty good.

>>22043484I live in northern France so yeah I can't really say anything about the quality of the fish available in the Midwest or the US in general. Farm raised atlantic salmon is pretty tasty and virtually indistinguishable from wild caught salmon here, besides being quite a bit cheaper.

I also love the taste of soy sauce and wasabi although I wouldn't say it's a profound one. I ate a lot of sushi in Japan but most of it was merely OK. It's best when it's reasonably fresh, and that includes the rice as well as the fish.
