I'm nuts for these things. They serve them nice and warm, but they stay delicious after they've cooled off. A satisfying crunch breaks through the slight sweetness of the glaze shell and dissolves the delectable nutmeat inside it. They're delicious, yes, but horribly overpriced like much of the street food here. I must kick this obsession. How do I not only replicate but also improve this recipe at home?

I don't know about improving on it but I've made them a few times at home in and oven and they come out good using nothing but an egg white base and a shitload of brown sugar. I tried a version with butter and that was inferior.
