honestly I have no clue where they get the meat from, my assumption is that it'd be minced lamb meat they make cuts off like like for shawarma kebab. so all in all it probably it is like gyro meat, but I don't know
don't spice it too much, the beauty of it is to taste the lamb if the spices overpower the lamb flavor it is a let down. it also has to have a decent lamb/to other things ratio to be a good meal
