So what should I make in this thing that's actually interesting?

All I've done so far are mediocre stews and eggs.

What do you consider interesting?
>>
Pressure cookers are for stews and soups and such. If you don't find any of those interesting you're out of luck.

I like stews, I'm just used to the slow cooking method in a dutch oven.
Soups I'm very new to, never really made them.
I'm looking for some suggestions.

here are a couple things i got on rotation
1.) Chicken Tinga:
>1 8oz can mexican tomato sauce (el pato brand is good)
>1 8oz can of chipotles in adobo
>1 can of rotel or diced tomatoes, or a couple chopped fresh tomatoes
>1-2T cumin (i dont measure spices just do what you feel)
>1-2T chili powder
>1t sweet paprika (any paprika to your taste is fine)
>1t sugar
>garlics
blend all this together into a sauce
combine with
>1 red onion, roughly chopped
>2lbs chicken breast (if theyre really thick cut them in half so the sauce covers more surface area during cooking)[these can be raw or frozen it doesnt seem to matter much]
>sprinkles of dried cilantro
stir all this together in your instant pot until it's mixed up. then pressure cook on high for 40 minutes. let pressure release naturally for at least 15 minutes (something about meat tightening up if you release too quickly)
then what i do is i remove the breasts to a dish, shred them up, and mix with enough of the sauce to cover everything. you can eat on this for like 4 or 5 days, serve as tacos, burritos, tostadas, in a bowl with rice and beans, etc. top with sour cream, quesa fresca, pico, avocado, whatever.
you'll have some extra sauce after this. it can be frozen, or reserved and used as a base for chicken tortilla soup (equal parts base and chicken broth, then warm up chicken in it, top with things like shredded cheese, fried tortilla strips, lime, avocado, radish, cilantro, red onion, jalapeno, etc)

2. Carnitas
>big honkin pork butt, 3 or 4 pounds, cut into big cubes, bone discarded or reserved for making stock later)
>bout 2 cups of liquid or a little less. i used 1 cup beer and about 1 cup of orange and lime juice, with a smidge of chicken base mixed in
>~3 tablespoons ground cumin, you want a lot of cumin
>1t mexican oregano
>a lot of diced garlic
>perhaps a bay leaf
>salt pepper
salt and sear your pork cubes in a pan on the stove on high until they get a good crust. throw in instantpot with everything else and pressure cook high 40 minutes.
same process as tinga, remove pork and shred, but this time when you're serving the pork, put the portion you're serving under the broiler with a little sauce until the edges become crisp almost like bacon.
serve in the same ways as the pollo.

i forgot to mention it but obviously salt this generously. it's a lot of tomato sauce so it can take a full tablespoon kosher salt or maybe more idk.

If you're not going to be making anything else in it, make rice. It unironically elevates cheap shit rice to expensive rice levels of quality.

they are excellent for making your own stock
if anything do that

do you just press the rice button? does it soak the rice for you? I've never used it for rice because idk why i wouldnt just use the stove..
>>
>>22044997
Pressure cook on high pressure for six minutes and it's done. Fluff the rice after you can safely open the instant pot. It makes very good rice in only 6 minutes

chicken consume using a rotisserie chicken
