Pressure cookers are for stews and soups and such. If you don't find any of those interesting you're out of luck.

Chicken Tinga:>1 8oz can mexican tomato sauce (el pato brand is good)>1 8oz can of chipotles in adobo>1 can of rotel or diced tomatoes, or a couple chopped fresh tomatoes>1-2T cumin (i dont measure spices just do what you feel)>1-2T chili powder>1t sweet paprika (any paprika to your taste is fine)>1t sugar>garlicsblend all this together into a saucecombine with >1 red onion, roughly chopped>2lbs chicken breast (if theyre really thick cut them in half so the sauce covers more surface area during cooking)[these can be raw or frozen it doesnt seem to matter much]>sprinkles of dried cilantrostir all this together in your instant pot until it's mixed up. then pressure cook on high for 40 minutes. let pressure release naturally for at least 15 minutes (something about meat tightening up if you release too quickly)then what i do is i remove the breasts to a dish, shred them up, and mix with enough of the sauce to cover everything. you can eat on this for like 4 or 5 days, serve as tacos, burritos, tostadas, in a bowl with rice and beans, etc. top with sour cream, quesa fresca, pico, avocado, whatever.you'll have some extra sauce after this. it can be frozen, or reserved and used as a base for chicken tortilla soup (equal parts base and chicken broth, then warm up chicken in it, top with things like shredded cheese, fried tortilla strips, lime, avocado, radish, cilantro, red onion, jalapeno, etc)

>>22044997Pressure cook on high pressure for six minutes and it's done. Fluff the rice after you can safely open the instant pot. It makes very good rice in only 6 minutes
